Day 59 - Vegan No Bake Cookies

These cookies are NOT low calorie, but are total bliss with a cup of coffee.


Breakfast

- Fried potatoes and onions (one of the best batches ever!)


Lunch

- Half of a Chipotle Vegetarian Burrito Bowl (rice, black beans, onions and peppers, mild salsa, corn salsa, guacamole, lettuce)



Snack

Vegan No Bake Cookies
(9 small cookies)

2 TBS earth balance
2 TBS cocoa powder
1 C sugar (cut back if you wish)
1/4 C unsweetened almond milk
1 1/2 C rolled oats
1/4 C natural peanut butter (I've used sunflower butter and it was really good, too)
1/2 tsp vanilla

In a medium saucepan combine the earth balance, sugar, nut milk, and cocoa. Bring to a boil and cook for two minutes. Remove from heat and stir in the peanut butter, oats, and vanilla. Drop by small spoonfuls onto wax paper and let cool until hardened.



Dinner

- Rest of my Chipotle Burrito Bowl
- Imagine Organic Creamy Potato Leek Soup (I was told it smelled like a public school cafeteria, but I liked it)
