Day 51 - Mac and Cheese Fail

I have chosen some recipes to test for Thanksgiving and today's test recipe was a vegan mac & cheese from Vegan Yum Yum. It got rave reviews, but I had to substitute a few things - roasted salted cashews instead of raw, almond butter instead of tahini (biggest wrong move) and it was horrible.


Breakfast

- PB&J on millet bread



Lunch

- Lentils and rice over spinach (with sweet potato to mash for Oliver)



Snack

- Pumpkin Spice Soymilk
- Corn chips and hummus
- Lindt 85% dark chocolate



Dinner

- Vegan Mac & Cheese (TOTAL DISGUSTING FAIL. WASTE OF CALORIES!)
- Maple Tempeh stir fried with with mushrooms, onions, peppers, and brown rice
- Woodchuck Pumpkin Hard Cider (Gluten free! It was a gift from a friend and very festive. Very sweet so I only had about half a bottle)
