Day 35 - Tofu Scramble

Sorry for falling behind in updates. I am in the midst of preparing for a move and I am cleaning out my life - as in getting rid of over 50% of my belongings. It's quite a task, especially while taking care of an almost-9-month-old and shuttling back and forth between two different houses I am sleeping at. Oh, life. Full of surprises. :)


Breakfast:

- Amy's Brown Rice With Black-Eyed Peas & Veggies, 1 bowl



Lunch:

- Fried potatoes and onions
- Tofu Scramble with broccoli, mushrooms, onions, and peppers

1/2 onion, chopped
2 cloves garlic, minced
1 C broccoli florets
3 oz baby bella mushrooms, slices
1/2 green pepper, diced
1/4 C nutritional yeast
2 tsp cumin
1 tsp paprika
1/2 tsp thyme
1/2 tsp tumeric
1 package firm or extra firm tofu (not silken)

Saute vegetables in oil for 3-5 minutes. Crumble in tofu and add spiced. Cook for 5-10 more minutes, stirring often.


Snack:

- Corn chips and hummus



Dinner:

- Vegan Lasagna
- Chocolate Pudding
