Day 2 - Vegetable Noodle soup

Despite dealing with a waking baby during the night and getting choppy sleep, I woke up feeling bright and excited. No hunger pains or feelings of deprivation, just looking forward to a day of fresh food!



Breakfast:

- One Honey Crisp apple with 2 TBSP of sunflower seed butter
- Decaf coffee with Coffee Rich


Lunch:

- Sliced tomato with a drizzle of olive oil, salt, and fresh basil

- Raw corn salad
(Four ears of raw corn kernels, juice of 1 lime, 2 TBSP chopped fresh cilantro, and salt to taste. SERVES 2-4)

- Vegetable Noodle soup
(Saute 1 TBSP oil, 1 chopped onion, 2 cloves of minced garlic, 8oz sliced baby bella mushrooms, 1 tsp powdered ginger, and salt and pepper to taste. Add 4 cups of vegetable broth, 5 oz rice noodles and bring to boil, turn to simmer for 5 minutes, add 3 cups fresh spinach - SERVES 6)


Dinner:

- Roasted Butternut squash with garlic and sage (no pine nuts this time)
- Roasted broccoli
(Two heads of broccoli florets, 2 TBSP oil, salt to taste, 400F for 30 minutes)
- Homemade applesauce
(8 apples, 2 TBSP earth balance butter, 3 TBS brown sugar, 1 tsp cinnamon)
