No longer vegan.

I have been losing steam with keeping this blog going as my energy and health have been steadily declining during these past two months eating vegan. I have been struggling with what my head and certain self-imposed social pressures tells me I should eat, and what my body says it needs.

Because I do not eat dairy or eggs at this time, my main sources of "filling" food (meaning foods other than vegetables) has been beans, soy, and grains. Such a large amount of these foods leave me feeling bloated, lethargic, and my appetite is never satiated. I simply have not been able to feel full, so I constantly graze, looking for a food to fill me up, and instead of continuing to lose weight, I have gained back five pounds in the past few weeks.

I have been reading about diet and realizing how what's right for one person won't be the healthiest for another, and that it is incredibly important to listen to what your own body needs. While searching the internet, I came across a blog post titled A Vegan No More that left me feeling like someone else knew exactly what I was feeling.

Eating had become stressful and a non-joyous experience - a fact that I hated! I am still figuring out what direction to take and what is healthiest for ME, but I do know that I want to stay focused on whole foods.

Today was my first full day as an omnivore again, and I have concentrated on eating vegetables, some organic grass fed beef, and fewer grains, and I am already feeling better.

I will still post here, but it won't be for daily menus. I will update when I have a new recipe to share, and it may be vegan or it may not.

Day 64 - Vegetable Red Curry

Breakfast

- Fried potatoes and onions
- Baked lentil chips
- Bruschetta topping



Lunch

- Vegetable Red Curry
- Jasmine rice


Red Curry

1 tbs oil
1.5 tbsp red curry paste
1 can coconut milk (NOT LIGHT!)
3 garlic cloves, minced
1 tbsp brown sugar
1 onion, sliced
3 carrots, chopped
1 zucchini, sliced
1 stalk broccoli, chopped
large handful Thai basil leave

In a large soup pan, saute curry paste in oil for 1 minute. Add coconut milk, garlic, and sugar. Stir and simmer for 2 minutes. Add vegetable and cook until just slightly tender, then stir in basil leaves

Day 61 - The longest day ever

These pictures are not accurate for portion sizes. My baby boy is sick so there is not much sleep happening, and when I'm up for so many hours I get hungry more often and eat more.

I ate double portions of breakfast (one at 7, one at 10), I ate half a huge plate of roasted vegetable with lunch, and throughout the night I ended up eating FIVE pieces of bruschetta. Yum yum yum.

Day 60 - Tempeh Tacos

I successfully resisted getting take out tonight and instead I threw together this recipe for Tempeh Tacos. Quite a tasty dinner!


Breakfast

- Fried Potatoes and onions (yes, again. it was another perfect morning for them!)




Lunch

- Amy's Brown Rice Black Eyed Peas and Vegetables Bowl
- Imagine Creamy Potato Leek Soup
- Corn Chips and White Bean Hummus

Dinner

Tempeh Tacos

(10 servings)

1 tbsp grapeseed oil
1 small onion, diced
1 8oz package of tempeh, crumbled
1 15oz can pinto beans, rinsed and drained
1.5-2 C water
taco seasoning (see below)



Taco Seasoning

1 tbsp chili powder
2.5 tsp paprika
2 tsp ground cumin
1.5 tsp onion powder
1.5 tsp salt
1 tsp garlic powder
1/8 teaspoon cayenne pepper
pinch of cayenne (optional)

Directions:

In a large skillet, saute onion in oil on medium-low heat for 5 minutes. Add the tempeh, pinto beans, taco seasoning and water. Stir thoroughly and simmer for 5 minutes. Serve in heated taco shells (LOVE the stand and stuff kind) topped with lettuce, cilantro, and diced tomatoes.

Day 59 - Vegan No Bake Cookies

These cookies are NOT low calorie, but are total bliss with a cup of coffee.


Breakfast

- Fried potatoes and onions (one of the best batches ever!)

- Half of a Chipotle Vegetarian Burrito Bowl (rice, black beans, onions and peppers, mild salsa, corn salsa, guacamole, lettuce)



Snack

Vegan No Bake Cookies
(9 small cookies)

2 TBS earth balance
2 TBS cocoa powder
1 C sugar (cut back if you wish)
1/4 C unsweetened almond milk
1 1/2 C rolled oats
1/4 C natural peanut butter (I've used sunflower butter and it was really good, too)
1/2 tsp vanilla

In a medium saucepan combine the earth balance, sugar, nut milk, and cocoa. Bring to a boil and cook for two minutes. Remove from heat and stir in the peanut butter, oats, and vanilla. Drop by small spoonfuls onto wax paper and let cool until hardened.

I ate a really light breakfast because I was rushing out to an interview and didn't have the time or appetite for anything but toast. Lunch was spent relaxing at the park on this absolutely GORGEOUS day, and of course for dinner...more minestrone.

Day 56 - Stress Eating Day

The morning started stressful and the feeling lasted most of the day. Only after a very brief "demo" treatment at a new and very interesting doctor, did I start to relax. But the had already gone badly with eating and it continued rolling downhill.

Day 55 - Homemade Summer Rolls

I prepared my own food at each meal today, but no new recipes to share. Soon I will have something exciting to post!

Day 54 - Soup Fail

Another failed recipe due to bad ingredients. I need to find some exciting new things to try. My meals are repeating themselves a LOT.

- Rice Noodle soup (Made a fresh batch and it tasted horrible. I think the new bag of noodles was past date or something. The whole pot of soup tasted musty and dirty. Only ate a little)

Day 51 - Mac and Cheese Fail

I have chosen some recipes to test for Thanksgiving and today's test recipe was a vegan mac & cheese from Vegan Yum Yum. It got rave reviews, but I had to substitute a few things - roasted salted cashews instead of raw, almond butter instead of tahini (biggest wrong move) and it was horrible.

I had lunch with a friend at a restaurant called Hawkers Asian Fare. All menu items are small plates ranging from $3-$6. I didn't ask about fish sauce or wheat in my specific items, so I couldn't guarantee anything, but I ordered as bets I could.

Day 48 - Minestrone

I finally have my camera up and running again! The battery charger was lost, so I had been borrowing a camera here and there for awhile. Now that I have mine back and working, I realized how much I love having my own equipment to use, though I was spoiled by using my moms 50mm f/1.4 lens. What a difference compared to my cheaper 50 1.8!

Oh well, I have mine, and I still love it :)


Breakfast:

- Minestrone (this started out like every other noodle soup, then I realized I wanted something different and just started throwing a whole bunch of stuff in the pot. Feel free to adjust to what you have in your pantry)


1 tbs oil
1 onion, chopped
3 cloves garlic, minced
3 oz baby bella mushrooms, chopped
3 small potatoes, cit into very small cubes
2 carrots, sliced
2 small yellow squash, cubed
1 C frozen corn
1 C frozen peas
1/2 jar Ragu organic garden veggie pasta sauce
1 can petite diced tomatoes
1 can Bush's pinto beans
4 C vegetable broth
1.5 tsp dried oregano
1 tsp dried basil
1 tsp dried parsley
2 C Tinkyada rice pasta spirals
3 C fresh raw spinach

In a LARGE saucepan, saute oil, onion, garlic, squash, mushrooms, carrot and potato for about 10-15 minutes. Add corn, peas, broth, pasta sauce, tomatoes, beans and herbs and bring to a boil. Add rice pasta and reduce heat to simmer. Cover and simmer for at least 15-20 minutes, Stir in spinach and season with salt and pepper to taste.

Day 45 - Veg Fest!

Had a blast at the Central Florida Veg Fest today. I wandered the booths for over three hours and ran into quite a few friends. A lovely lovely day surrounded by fun vegan food :)

- Rice noodle soup (just another morning soup I threw together. Carrot, onion, potato, peas, mushrooms, spinach, ginger powder, and noodles)



Snack:

- Coffee and a gf brownie (I couldn't resist)

Day 44 - Bob's Red Mill Gluten-Free Brownies

I tried a Bob's Red Mill GF brownie mix for the first time using Earth Balance, cornstarch + water instead of egg, and added some vegan chocolate chips. They were fairly chocolate and pretty good once cooled, but they had a weird tangy taste from the garbanzo bean flour.

I'm realizing that my higher sugar intake makes me hungrier, especially lat at night.


Breakfast:

- Vietnamese take-out leftovers from last night
- Starbucks Vanilla Soy Latte (HOLY SMOKES SO AMAZING! Realized later I accidentally forgot to order decaf.)



Lunch:



- Corn chips with Tuscan White Bean Hummus
- Bob's Red Mill Gluten-Free Brownie



Dinner:

- Lentils and Rice over a big pile of spinach
- ANOTHER Vanilla Soy Latte (Decaf this time, and almost as good as regular. My new autumn drink :)

Day 42 - Lentil Hummus

Bad news: I lost my camera battery charger which is why I haven't been posting photos lately. I know it makes it a lot less interesting when you can't see the food I'm writing about, which is why I've been slacking on putting up a new post every day. I will try to work on this (and I ordered a new off-brand charger!)

Good news: I've now lost over 35 pounds, can fit into 12's (that are getting a little loose), and my thighs don't touch anymore!

It was so comforting to start making soup again. It's one of the easiest and somehow most satisfying meals I can think of.

I don't know why I ever thought I liked mochi. It tasted like gummy and bland rice globs. Which is really what it is.

Day 39 - Sweet Tempeh Stir Fry

The stir fry I half-invented today needed a little something extra but I couldn't figure out what. Maybe a touch of heat and a squeeze of lime would have helped.

Day 35 - Tofu Scramble

Sorry for falling behind in updates. I am in the midst of preparing for a move and I am cleaning out my life - as in getting rid of over 50% of my belongings. It's quite a task, especially while taking care of an almost-9-month-old and shuttling back and forth between two different houses I am sleeping at. Oh, life. Full of surprises. :)


Breakfast:

- Amy's Brown Rice With Black-Eyed Peas & Veggies, 1 bowl



Lunch:

- Fried potatoes and onions
- Tofu Scramble with broccoli, mushrooms, onions, and peppers

1/2 onion, chopped
2 cloves garlic, minced
1 C broccoli florets
3 oz baby bella mushrooms, slices
1/2 green pepper, diced
1/4 C nutritional yeast
2 tsp cumin
1 tsp paprika
1/2 tsp thyme
1/2 tsp tumeric
1 package firm or extra firm tofu (not silken)

Saute vegetables in oil for 3-5 minutes. Crumble in tofu and add spiced. Cook for 5-10 more minutes, stirring often.


Snack:

- Corn chips and hummus



Dinner:

- Vegan Lasagna
- Chocolate Pudding

Bas news: I'm struggling to keep up with updating this blog daily and I'm forgetting some of my foods when I don't write it down right away :/

Good news: I started making my own pudding that is totally amazing, so I don't have to pay so much $$ for those tiny Zen chocolate pudding cups!


Breakfast:

Lunch

- Amy's Organic Tofu, Brown Rice & Vegetables
- Chick-fil-a French Fries



Snack:

- Corn chips and hummus



Dinner:

- Vegan Lasagna
- Chocolate Pudding made with Almond Milk


Chocolate Pudding

2 C unsweetened almond milk
3 TBSP corn starch
1/2 C sugar
1/3 C cocoa powder
pinch of salt
2 tsp vanilla extract

Combine almond milk, corn starch, sugar, cocoa powder, and salt in a medium saucepan. Bring to a boil and reduce to simmer, whisking constantly until thick and glossy. Chill for a few hours before serving.

Day 33- Vietnamese take-out

Yikes. After totally avoiding tofu for a few years, I'm going on tofu overload. I'm loving the texture and added protien, but I know it is overly processed and too much can mess with my hormones (and Oliver's). I'm gong to attempt to start cutting back...soon.


Breakfast:

- Tofu Scramble with Mushrooms, onions and peppers
- Uncle Matt's OJ

Day 32 - Ethos

I was giddy with excitement to try the Sunday Brunch at Ethos, an all vegan restaurant in Orlando that has gluten-free options. My happiness extended throughout the day when we went to Starbucks for a soy frap and Raphsodic Bakery for Vegan GF cupcakes. Lovely day :)


Breakfast (Snack):

- Toast with Earth Balance butter



Brunch:

Snack: (EVIL SUGAAAR)

- Decaf Cafe Vanilla Frap with soy - no whip
- Vegan Gluten-Free Cupcakes from Raphsodic Bakery! (Apple Crisp flavor is delicious!)



Dinner:

- Tempheh Chili (made another batch!)
- Garlic Bread

Day 31 - Tempeh Chili

I can not believe how good today's chili was. I made a batch to share with my parents and a friend, and we finished off the entire pot! I pieced together a few different recipes and once we started eating I made sure to write down the recipe before I forgot what I did. I need to make another batch asap!


Breakfast:

- Fried Potatoes and Onions
- Decaf Coffee with Almond Milk



Snack:



- Larabar - Pecan Pie



Lunch:



- Imagine Organic Creamy Broccoli Soup
- Zen Chocolate Pudding made with almond milk



Dinner:

- Tempeh Chili
- Vegan Gluten-Free bread with Earth Balance butter


Tempeh Chili

(8-10 servings)

1 tbsp oil
3 cloves garlic, minced
1 onion, chopped
2 small bell peppers, diced
1 8 oz package tempeh, crumbled
1 can petite diced tomatoes
1 can tomato sauce
1 can hot chili beans
1 can red kidney beans, drained
1 C frozen corn
2 tbsp chili powder
1 1/2 tsp cumin
1 1/2 tsp oregano
1/2 tsp salt
1 C water

Get the oil warm in a large saucepan over medium heat, then saute the garlic, onion, bell peppers, and tempeh until the onion is translucent.

Add the tomatoes, tomato sauce, beans, corn, spices, and water. Mix thoroughly then cover and simmer for 30 minutes. Done!

Day 30 - Thai Food!!

Breakfast:



- Larabar - Coconut Cream Pie
- Decaf Coffee WITH ALMOND MILK! (I've successfully made the transition to nut milks from fake non-dairy creamer full of hydrogenated oils and corn syrup!)



Lunch:

- Jasmine Fried Rice with Thai Basil and Tofu
- Vegetarian Spring Rolls (I think these might have been wheat!!! I thought for sure I had asked last time and they said it was a rice wrapper, but I may have confused them with a different restaurant)



Dinner:

- Leftover Jasmine Fried Rice
- Kettle Tias with Sabra Roasted Pine Nut Hummus

Day 29 - TRAGIC TRAVEL EATING

This turned into a horrible day of junk food eating after lunch. I turn into an eating machine when traveling 15 hours from Kentucky back to Orlando.

DO NOT EAT THIS WAY. YOU WILL FEEL DISGUSTING.


Breakfast:

- Fried Potatoes and Onions



Snack:



- Synergy - Raspberry Chia Kombucha




- Ginger Snap Larabar (these make the perfect travel food - all natural and tasty)



Lunch:



- Amy's Brown Rice With Black-Eyed Peas and Veggies



Snack:



- Kettle Brand Baked Potato Chips Hickory Honey Barbeque (over the coarse of the day I ate an entire BAG)




- Kettle Brand - Tias! Sweet Baja Barbeque




- Sabra - Roasted Pine Nut Hummus (half a small container!)



Dinner:

- Steak 'n Shake - Large French Fries (Yes. I had french fries for dinner *shame*)



Snack/Dessert:



- Grande Starbucks Cafe Vanilla Fappuccino With Soy Milk - No Whip
